Gabriele Franco was born into food. Growing up in Sicily, cooking wasn't a career choice — it was a language, spoken at every family table, every village feast, every Sunday afternoon that stretched until sunset. His grandmother shaped pasta by feel. His father argued passionately about olive oil. His mother preserved lemons and aubergines with a precision that no recipe could fully capture.

After formal training in Palermo, Gabriele joined MSC Cruise Ships — a defining chapter that took him from the Mediterranean to the Caribbean, from the Atlantic to the Pacific. Cooking for thousands, managing kitchen brigades, adapting Italian cuisine for the world. It was exhausting, exhilarating, and transformative.

In 2017, he arrived in Sydney. The Inner West immediately felt like home — the tight community, the Italian heritage, the quality of produce. After years with Navarra Venues, he took the leap and opened La Botte D'Oro on Norton Street, Leichhardt. A restaurant that is, quite simply, a piece of Sicily in Sydney.

A Life in Food

1985

Born in Sicily

Grew up surrounded by the food traditions of Southern Italy — nonna's pasta, father's olive oil debates, and Sunday feasts that lasted all afternoon.

2005

Culinary Training

Formal training in Palermo, followed by stages in restaurants across Sicily and Naples.

2009

MSC Cruise Ships

Joined MSC Cruises as a chef, cooking for thousands of guests from around the world — an intensive, global kitchen education.

2014

Executive Chef, MSC

Promoted to Executive Chef, overseeing entire kitchen brigades and developing Italian-focused menus across multiple vessels.

2017

Arrives in Australia

Settled in Sydney, immediately falling in love with the Inner West's Italian community and the quality of local produce.

2019

Navarra Venues

Joined Navarra Venues as Executive Chef, bringing authentic Italian flavour to some of Sydney's most celebrated event spaces.

2022

Founds La Botte D'Oro

Opens La Botte D'Oro on Norton Street, Leichhardt — a restaurant that feels like a piece of Sicily in Sydney's Inner West.

2025

Inner West Awards Finalist

Recognised as a finalist in the Inner West Small Business Awards — celebrating the restaurant's impact on the community.
